For the truest sense of what Ecuadorian cuisine is, start with prawn ceviche, a cold and zingy soup of prawns cooked in lime, chillies and tamarillo. Other starters include plantain with a homemade cheese and 'Mote Pillo', giant white corn with eggs and cheese, which can also be upgrade with pulled pork.
Follow this up with a fried pork fritada or 'encebollado', hearty chunks of tender tuna serve with cassava and citrus tomato.
